On Easy Meals

With Winston’s upcoming arrival (T-minus seven weeks!), Liam and I have been perfecting our freezer meal skills. As an attempt to corral them all in one place, I figured I would let you in on some of the really yummy recipes we use! They are mostly chicken recipes since that’s what we eat but a few recipes could definitely be replaced with pork or ground beef!  With the correct ingredients all of these are gluten free and can be placed straight from freezer to Crockpot! Cook on low for 6-8 hours and voila! Once cooked, the meat will be nice and tender (we like to shred ours ) and ready to serve with rice, pasta, veggies or a salad!

The method is easy—combine raw meat with the ingredients below, place in a labeled gallon size freezer bag, and throw it in your freezer!

Hawaiian BBQ Chicken

  • 1 bottle of BBQ sauce
  • 1 can of diced pinapple
  • 1 small diced yellow onion
  • 2-3 chicken breasts or thighs

Chicken Alfredo

  • 2 cans of cream of chicken soup
  • Italian dressing packet
  • 8 oz of cream cheese
  • 1 ½ cups of water
  • 3-4 chicken breasts

French Onion Chicken

  • 2 cans of French onion soup
  • ¾ cup of sour cream
  • 2-3 Chicken Breasts or thighs

Asian Pork Tenderloin

  • ¼ cup olive oil
  • ½ cup honey
  • ¼ cup soy sauce
  • 2 cloves minced garlic
  • 1 tsp ginger
  • 1 ½ tsp red pepper flakes
  • ½ packet of steak seasoning
  • 1-2 pork tenderloins (about 3 pounds)

 Pesto Chicken

  • 1 small can pesto sauce
  • 2 diced red potatoes
  • 1 can of corn, drained
  • 1 diced zucchini
  • 2 large carrots, diced
  • Ranch dressing packet
  • 3-4 chicken breasts

Sweet Thai Chicken

  • 1 cup peach preserves or jam
  • 3 large cloves of garlic, minced
  • 1/3 cup of soy sauce
  • 2 tsp of ginger powder or 1 tsp fresh ginger
  • 2-3 chicken breasts

Chicken Curry

  • 6oz tomato paste
  • 14 oz coconut milk
  • 1 ¾ cup tomato sauce
  • 3 tbs honey
  • 2 tbs curry powder
  • 1 tsp red pepper flakes
  • 2 large cloves of garlic, minced
  • 1 small onion, diced
  • 2 cups of frozen peas
  • 3-4 chicken breasts

Garlic Chicken

  • 6-8 cloves of garlic, minced
  • 1 cup brown sugar
  • ¼ cup soy sauce
  • ¼ cup olive oil
  • 2-3 chicken breasts
